Bang Bang Chicken Tacos

A fun and flavour-packed twist on taco night, crispy chicken tenders, crunchy slaw, and a creamy, spicy sauce wrapped in soft tortillas for a quick and satisfying meal.
Serves: 2 | Makes: 4 tacos
Ingredients
- 4 small flour tortillas
- 6–8 Janes chicken tenders, cooked and sliced
- Shredded red cabbage (or slaw mix)
- ¼ cup chopped fresh cilantro
- ¼ cup mayonnaise
- 1½ tbsp sweet chili sauce
- 1 tsp sriracha (or more to taste)
- ½ tsp garlic powder
- ¼ tsp paprika
- Small pinch of black pepper
- 2 cups shredded red cabbage
- ¼ cup chopped fresh cilantro
- 2 tbsp mayonnaise
- 1 tbsp fresh lime juice
- ½ tsp lime zest (optional)
- Drizzle of avocado oil
- ¼ tsp honey
- Pinch of salt
- Freshly cracked black pepper, to taste
Directions
- In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, garlic powder, paprika, pinch of black pepper to create the Sweet & Spicy Bang Bang Sauce. Add a little water to thin the sauce if desired. Taste and adjust the spice level to your liking. Set aside or refrigerate until ready to use.
- In a large bowl, combine shredded red cabbage, chopped fresh cilantro, mayonnaise, fresh lime juice, lime zest (optional), avocado oil, honey, pinch of salt, black pepper to taste to create the Zesty Cilantro Slaw. Toss well to coat and set aside to marinate slightly while you prepare the tacos.
- Cook chicken tenders according to package directions until golden and crispy.
- Warm the tortillas slightly in a dry skillet.
- Place a layer of the Zesty Cilantro Slaw on each tortilla, then top with chicken tenders.
- Drizzle generously with Sweet & Spicy Bang Bang Sauce and garnish with extra cilantro, if desired.
- Serve immediately and enjoy!
