Chicken and Waffles with Hot Honey

A sweet and savoury classic with a modern twist! Golden waffles topped with crispy chicken tenders and finished with a delicious egg and spicy hot honey for the ultimate comfort meal.
Ingredients
- 1 cup all-purpose flour
- 1 tsp baking powder
- ¼ tsp sea salt
- Freshly cracked black pepper (to taste)
- 1 egg (for waffle)
- 1 cup milk
- 1½ tbsp unsalted butter, melted
- 2 scallions, green parts only, finely chopped
- 3 Janes chicken tenders
- 1 over-easy egg (for serving)
- Hot honey, for drizzling
- Chopped green onion, for garnish
Directions
- Cook chicken tenders according to package directions until golden and crispy. Set aside.
- Prepare the waffle batter by whisking together the flour, baking powder, salt, and pepper in a large bowl.
- In a separate large measuring cup or bowl, whisk together the egg and milk until well combined.
- Pour the wet ingredients into the dry ingredients and stir until mostly combined.
- Add the melted butter and chopped scallions, folding gently until just incorporated, do not overmix.
- Preheat and lightly grease your waffle maker. Pour in the batter and cook until the waffles are golden and crisp.
- While the waffles are cooking, prepare an over-easy egg in a nonstick skillet.
- Place one waffle on a plate and top with the chicken tenders and egg.
- Drizzle with hot honey and garnish with chopped green onion. Serve immediately.
