Vietnamese Panko Sole Bowl

This Vietnamese rice bowl is the perfect food, packed full of flavour and easy to make at home. You’ll love this rice bowl layered with lettuce, carrots, cucumbers, and herbs and sliced Janes Panko Breaded Sole on top. Drizzle Nuoc Cham Vietnamese salad dressing, and you’ll be hooked!
Ingredients
- 4 Janes ultimates Panko Breaded Fillet of Sole
- 2 cups cooked rice
- 1 cucumber halved or quartered and sliced
- 2 carrots thinly sliced
- 1/2 cup fresh mint chopped
- 1/2 cup fresh cilantro chopped
- 1/2 cup fresh basil chopped
- 2 cups chopped fresh lettuce
- chopped peanuts for garnish (optional)
- Chopped chilis for garnish (optional)
- Nuoc Cham Salad Dressing: 6 tablespoons water, 2 tablespoons sugar or honey, 2 tablespoons fish sauce, Juice of one lime, crush red pepper and chilis to taste
Directions
- Prepare 4 Janes ultimates Panko Breaded Fillet of Sole as per instructions
- Add the ingredients to each bowl by layering the cooked rice on bottom followed by lettuce, carrots, cucumbers, and chopped herbs
- Mix together ingredients for dressing
- Place sliced Panko Breaded Sole fillet on top and garnish with chopped peanuts
- Pour prepared dressing on top of each bowl just before eating
